How does transaction between cryptocurrencies and fiat currencies work?

Hi. I am a bit new in the cryptocurrencys world. As far as I know, transactions made through the blockchain of a certain crypto, such as Bitcoin, happen only between the same crypto. You pay for 1kg of bread with bitcoin and the baker receives... bitcoin. Is is wrong?
But now, my question. How do you actually buy bitcoin with fiat currencys, like dollar, euro, pound or brazilian reais? Does the transaction happen in the bitcoin blockhain? I know we gotta buy in some exchange, but how does the transaction works? How bitcoin becomes dollar? How dollar becomes bitcoin?

Brazil's Revenue Federal Bureau (RFB) has updated the tax code. The new edition provides penalties for traders who do not declare income from transactions with bitcoin and other cryptocurrencies.
The RFB introduced an addition to previous provisions promulgated in August, according to which Brazilian citizens are required to report to the tax authorities on all transactions made with cryptocurrencies. Those who fail to file a Declaration of their digital asset transactions will be fined between 500 and 1,500 Brazilian reais ($120-$360).
This initiative is aimed at combating money laundering, terrorist financing and tax evasion.
The already implemented tax code applies to individuals, companies and brokers, and also applies to all activities related to cryptocurrencies: trading, donations, exchanges, as well as depositing and withdrawing digital assets.
The new rules may also affect cryptocurrency exchanges, since the RFB system is required to provide information about transactions and user data. If it is not used, exchanges will not be able to meet the requirements for the provision of data.

The largest Bitcoin exchange in Brazil gets hacked: depositors are not guaranteed to get their money back

Disclaimer: I'm not associated in any form with Mercado Bitcoin other than having done trades there. Luckily for me I didn't have any money there at the moment.
Mercado Bitcoin, the largest – and only – bitcoin exchange in Brazil, has been offline for almost a week now. For the first few days there was no communication, but the owner just sent an email to all accounts explaining he was hacked. I haven't seen it posted anywhere in English so I'l do my best to translate what I got.
As far as I understood, someone hacked his "redeem code" feature, being able to generate false credits in the system. Then during the night the hacker moved out all his credit into bitcoins, leaving MercadoBitcoin without enough BTC to pay back all the other depositors.
Mercado hasn't revealed how much was robbed or more details than that, but has said he will try to pay back what he can, in that order:
  1. Withdraws in Reais that were requested before the attack
  2. Deposits in Reais that hadn't been credited yet
  3. Current balances in Reais
  4. Current balances in Bitcoins
Meaning that depending on how much was left, bitcoin balances will only be given back if he is able to pay back all the money (in Reais) to other creditors, and even that money isn't fully guaranteed.
I posted about MercadoBitcoin last week when I wanted to share the word that Bitcoins in reais where 25% overvalued over other currencies. I assumed it was mostly because of the small amount of sellers but it seems there was also another factor: lack of trust in the exchange.
I doubt this attack is related to this reddit post: this week Exame one big financial magazine in Brazil also had a feature in Bitcoins which mentioned the Mercado. Either this was an opportunistic hack or just a case of worse timing, it seems that the adoption and reputation of Bitcoins in Brazil has received a bad punch.

Hi guys, I'm a student from Germany and currently doing a paid internship in Campinas - SP Brazil. Ill be leaving Brazil at the end of the month. My problem is that I will be paid for my internship in cash just a few days before my flight home, so I wont be able to spend all of the money. Since Im trying to avoid fees for money exchange I read on the internet that there is a Bitcoin ATM in Sao Paulo where I could buy BTC for Reais. All the information I found was outdated, so I was thinking there might be a Brazilian redditor who knows weather this ATM still exists and if it would be worth it to go there with around 1000 Reais or if you know any trustworthy sellers at localbitcoins in Sao Paulo or Campinas. Xapo Wallet beginner review

So, I wanted to test how Bitcoin work and after a few hours lost in scam faucets, and got my satoshis blocked in Faucetbox, I found out about Xapo Wallet. I already had my account open and a few satoshis there when I read reddit opinion about them and became a little bit worried. So I did a test. I had only 5500 satoshis on my wallet (3 cents) and request a deposit to my Mercado Bitcoin account (a Brazilian bitcoin site, where you can exchange bitcoin for reais). I received a message saying that my satoshis would be in my account in 24 hours. Almost an hour later, Mercado Bitcoin sent me an email saying that my satoshis where there. So, I guess Xapo will work for me, I don't want the debit card they offer, I just wanted a wallet where I can deposit my bitcoins and satoshis and some time later, transfer to Mercado Bitcoin.
